Nowadays, our lives have become so busy that we do not have enough time to look at out eating life style due to which we either eat the right food or not. In this scenario the habit of eating junk food or ready made food is increasing day by day which results in lots of health problems. But people do not realize that taking such food regularly can raise some serious heatlh conditions. If everyone tries to think over it and spent little time to cook at home and prepare some healthy food, then not only their health will become good but also their expenses will decrease too. Some home made items which you generally buy from restaurants or shops are chicken stock, mayonnaise, tomato ketchup, pizza sauce, BBQ sauce, tomato paste, plain yogurt, Thai curry paste, whipped / heavy cream etc. For these food items we spend so much money but the fact is that we can make all these items at home and freeze then for out future usage. I am sharing with you some recipes of such food items that can be made at home without much of a hassle. Chicken Stock Recipe: 1. Take chicken with bones and put it into a deep pan. Add water in it so that water level should 1inch above the chicken pieces, now put few cloves, cardamoms, cinnamon sticks, salt, pepper, bay leaves, garlic cloves and few ginger slices. 2. Cover the pan and let it cook till water completely boils and white layer starts to appear on the top of the stock. 3. Turn off the stove and let it be cooled. After it cools, drain out all the chicken stock/water using drainer. 4. You can freeze this chicken stock and can use in any food in which you need and you can use this stock instead of using chicken cubes. Mayonnaise Recipe: 1. Take an egg and beat well to mix yolk and egg white well. Now add one cup of oil and beat well to make foam like texture. 2. After it add a teaspoon of mustard paste, salt to taste, sugar, a teaspoon lemon juice and pinch of pepper and mix again in the egg mixture. 3. Mayonnaise is ready and you can use in sandwiches and salads. 4. You can also make some variation in it like; use egg yolks only instead of egg white or add some crushed garlic to make mayo garlic. Tomato Ketchup Recipe: Ingredients: 1 ½ Kg tomato 1 cup vinegar 1 tbspn red chili powder 1 tspn salt (to taste) 2 cup sugar (to taste) Procedure: 1. Cut the tomato in large pieces and blend it in the blender. 2. Using drainer, drain out the smooth paste of tomato having no skins and seeds. 3. Boil the paste. 4. Add red chili powder, vinegar in it and cook it till sauce become slightly denser. 5. After 10 minutes, add sugar in it and cook for 15 minutes or till sauce become thick according to the density of sauce you want. 6. Ketchup is ready, cool it in the fridge and enjoy it with delicious snacks. Tomato Paste: 1. Boil tomatoes, when tomato becomes soft remove their skins, 2. Blend the boiled tomatoes in the blender to make the paste. 3. Again boil this paste with very little salt, sugar and paprika powder for 5-10mins. 4. Cool it at room temperature and freeze it. BBQ Sauce Recipe: Ingredients: 4 tomato medium size (cut in cubes) 2 tbspn tomato ketchup 2 tbspn vinegar 1/2tbspn brown sugar 2 tbspn hot sauce 1 tbspn oil Procedure: 1. Heat oil in a pan, add tomato pieces in it and let it cook till tomato become soft. 2. After that add tomato ketchup, vinegar, brown sugar and hot sauce in it and mix well. 3. Cook the sauce till all the water of tomato has been dried and sauce starts to become denser. 4. Remove the pan from the stove and let it cool at room temperature. 5. In a blender, blend the prepared sauce so that all the tomato pieces with skin blend in the sauce. 6. If you want to make sauce smoother, then drain the sauce using squeezer or drainer. Pizza sauce Recipe: Ingredients: 1 cup tomato paste ½ cup tomato ketchup 3-4 cloves garlic copped Salt to taste 1 tbspn red chili crushed 1 tbspn white vinegar 3 tbsn oil 1 tspn black pepper 1 tspn white pepper 1 tspn oregano 1 tspn rose merry Water to cook Procedure: 1. Heat oil in a pan and add garlic to give it brown color. 2. Add tomato paste, ketchup, red chili, pepper and salt and cook for 2-3 minutes. 3. Add rose merry and oregano, stir and add ½ cup water in it. 4. Stir continuously and cook on high heat till all the water has been dried. Plain Yogurt recipe: 1. Boil milk, pour it into a steel bowl cool it at room temperature by continuously stirring it using spoon. 2. Add a tablespoon of yogurt in it and mix again using spoon so that little foamy bubbles appear on the top of milk. 3. Now leave it for 6-8 hours or over night in the kitchen. Do not put into fridge until yogurt is not formed. 4. Plain yogurt is ready. Now you can put it into fridge. Thai Curry Paste: 1. Take 4 tablespoon of tomato paste, 1 teaspoon of mustard paste, half tablespoon of red chili powder and half a tablespoon of coriander powder and mix well. 2. You can use this paste in making Thai dishes or even any spicy dish for curry paste. Whipped / Heavy Cream: 1. Take a pack of fresh cream and put it into fridge in steel bowl for half an hour. 2. Now add some icing sugar in it to taste and beat well to make a thick texture. After it again put it into fridge for half an hour. 3. Whipped cream is ready and you can easily use it in your desserts or any food items but make sure that you have to use only steel bowl to make it.
